Southwest Mac n Cheese

1 Box Family size Deluxe Shells & Cheese

2 pre cooked ¼ lb all beef patties

½ c. chopped onion

¼ t. chopped garlic

¼ t. Worcestershire sauce

1 can diced tomatoes with green chilies

½ c. Southwest style salsa

 

Prepare mac and cheese per box directions;  if using frozen beef patties, thaw in microwave, then crumble in 10in frying pan. Cook with chopped onion, garlic and Worcestershire sauce. Add tomatoes and let simmer for 10 minutes. Add salsa and allow to simmer for another 5 minutes. Add beef mixture to finished mac and cheese and enjoy!

Pork Chops with Apples and Stuffing

I went into HEB earlier to grab a few things for the upcoming Halloween Potluck at work and found boneless butterfly pork chops on sale for $1.97/lb.

Porkchops with Apples and Stuffing

1/2 t. butter
2  unpeeled red baking apples sliced and cored
2 t. flour
1 t. packed brown sugar
1/4 t. ground cinnamon
1/2 t. seasoned salt
4 butterfly cut porchops of equal size
1 c. apple cider
2 T butter
1 box chicken stuffing mix
1/4 c sweetened dried cranberries

1. Heat oven to 375*F. Brush bottom of 13×9 pan with 1/2 t. butter, spread apple slices in single layer in dish. In small bowl, mix flour, brown sugar, and cinnamon. Sprinkle over apples.

2. In medium sauce pan, heat apple cider and 2 T. butter with seasoning packet from stuffing mix to a boil over medium-high heat. Stir in cranberries and stuffing, mix well. Remove from heat, cover and let sit for 5 minutes.

3. Sprinkle pork chops with seasoned salt, fill with about 2 T. of stuffing, then place on top of apples. Spray a sheet of foil with cooking spray and cover pan. Bake 45-50 minutes and uncover. Bake an additional 5-10 minutes or until no longer pink and a meat thermometer reads 160*.

I served these with the apples and it was a great fall dish!

Home-made Hamburger Helper

  • 1 Lb Hamburger
  • 2 cups elbow macaroni
  • 2 tablespoons worchestershire sauce
  • 1 teaspoon sweet basil
  • pinch of salt to taste
  • 2 tablespoons cheese spread
  • 3 cups hot water

Brown hamburger with worchestershire, basil and salt until no longer pink. Add hot water, noodles and cheese spread, bring to a boil.  Reduce heat, cover and simmer for 12-15 minues. Stir occasionally.

 

I made this for the first time tonight trying to come up wtih something to make with hamburger and elbow macaroni without using tomatoes :)

Almost Flopped Apple Pie

I thought I’d be slick and purchase 2 deep dish pie crusts to use for a home made apple pie. Matt is impressed with how easy it is to cook different things at home and I’m hoping to use this to my advantage! I set one crust out to thaw earlier and should have read the instructions.

I let it sit and thaw for too long because after I filled the bottom crust, that I also let thaw for the recommended 10-20 min, I wasn’t able to remove the other crust from the pie pan. Had I read the instructions, I would have noticed that it also said to let it thaw upside down! DOH! I wrangled the crust over as much of the apples as I could, and used a little water to smoothing the really bad parts over.
